Mandarin Orange & Almond Salad (remember The Magic Pan restaurant?)
This has always been one of my favorite salads. Sunday was relaxed so this fit the day. As with most salads the ingredients are estimates except for the dressing.
• bowl full of lettuce greens (spinach is nice with this)
• 6 green onions, thinly sliced
• a couple handful of toasted slivered almonds
• 1 - 2 cups of mandarin orange slices
• 1 avocado cut into cubes (this isn't part of the original recipe but makes it more satisfying.
For Salad: Toss all ingredients together and coat with dressing when ready to serve.
Dressing:
•¼ cup vegetable oil
•2 Tbsp sugar
•2 Tbsp vinegar
•1 Tbsp fresh parsley, chopped
•½ tsp salt
•Dash pepper
•Dash Tabasco
For Dressing
Blend all ingredients for the dressing in the blender until the sugar has dissolved.
