Edamame & Ivory...I mean Corn....

With warm weather approaching, what a better time to elicit a cold nutrient filled salad; is that like cold fusion? YES. We shall make a fusi-form (not really) salad of simple ingredients that are in the fridge, freezer, and the cupboard; carrot, celery, shallot, and lemon from the former, edamame and corn from the intermezzo, and diced tomatoes, garlic, ginger-dressing, aminos, vinegar, olive oil, dill, and pepper from the latter. If you have fresh tomatoes, by all means rock those instead of the canned. This is an attempt to use some of the stuff in the freezer; that means some thawing is involved, like thawing out the icy hyperboles muttered under your ___________'s husky breath [fill in the blank] about how great his/her ________ is [son/daughter/nephew/tennis game.] Ingredient list:

1 carrot, peeled & chopped
1 large celery stalk, chopped
1 clove of garlic, minced
½ large shallot, or a small shallot, OR, a bit of onion, finely chopped
1 cup frozen edamame, thawed by blanching
1 cup frozen yellow corn, thawed by blanching as well
*Go ahead and use that corn you vacuum packed last millennium; else it's going to stay in there for two more! What are you saving it for!?
½ can diced tomatoes...diced organic tomatoes....salt free....etc

Dressing:
2 tablespoons Bragg's ginger dressing
1 teaspoon Bragg's aminos
1 teaspoon olive oil
Juice from ½ lemon
½ teaspoon dill
½ teaspoon cracked black pepper

Put the above in a container with a cover, and shake. Serves 2 as a side dish; maybe 1 as a main dish however one would need something to counteract the acidity; some type of bread or tortilla or the like.




Give it a whirl, it's as fun as finding nut chunks at the bottom of your smoothie!
